True dry steam reaches deep into wood pores where hot water or chemicals cannot, making steam a much more effective way to remove yeast genera such as Brettanomyces from wooden barrels. Steam at a constant high temperature is proven to eliminate yeast and bacteria from various surfaces using little amount of water and no chemicals. Begun as a janitorial pressure washer supplier in East Asia 26 years ago, SJE Corporation (US Subsidiary: Steamericas) has evolved into the industry leader specializing in vapor steam machines for a wide rage of business applications around the globe.
Yujin Yoo Anderson, Steamericas owner and general manager, credits her father, a marine boiler engineer, with recognizing the value of dry steam long ago when his South Korean customers were grappling with frozen waste-water generated by pressure washers during the country’s icy winter months.
He developed and later patented one of the boiler designs for the Optima Steamer™, a revolutionary machine that increases water temperature beyond the 212 degrees Fahrenheit boiling point to create saturated and super-heated steam. The result is a highly effective cleaning methodology that destroys harmful microorganisms and reduces water usage from an average of three to four gallons a minute to .08 gallons.
Anderson points out that this water-saving, eco-friendly sanitation technology is especially beneficial to the wine industry.
“Researchers are recognizing steam as a remarkable tool,” Anderson reports. “You don’t have to worry about waste water disposal or changing an oak barrel taste. Steam penetrates into the pores to kill pathogens, like Brettanomyces, Zygosaccharomyces and other microorganisms, even those that can survive water heated to 160 degrees.”
Although many wineries recognize the superiority of steam for barrel, tank and bottling line sanitation, Anderson notes that the Optima Steamer™ is highly effective for other surface areas as well.
“You can clean floors, counters, harvest equipment – anything, really,” Anderson attests. “Winemakers are starting to see steam as a holistic tool that saves them lots of money and lots of time.”
Anderson explains that there are three levels of steam; dry (saturated) steam, wet steam and super-heated steam which is at a higher temperature than its boiling point. The Optima Steamer™ has the capability of moving between any of these levels at any time through a unique, moisture control valve.
“Steam is great, but sometimes you may want more pressure and that requires more moisture,” Anderson clarifies. “To achieve that, you can just adjust the moisture control valve. I have yet to find a competitor that can deliver all three levels. That’s what’s so special about our machine.”

To confirm how well the Optima Steamer performs on used barrels, we purchased 2 used barrels of the same brand and history. There were both already cleaned and sanitized by the used barrel seller. We steamed one of the 2 barrels and cut both of them in half to compare. The video visually captures the benefits of steam cleaning over water based cleaning methods. Steamericas is proud to present the latest model of the Optima Steamer Series, the “DS-S.” Thanks to the success of the Optima Steamer DMF model and abundant customer feedback, the company sought to introduce an upgraded version of the Optima Steamer.
The Optima Steamer DS-S is an all-stainless-steel steam generator that utilizes diesel for heat. While the steam boiler performance remains the same, the DS-S model comes with much sought-after upgrades and features.
The Optima Steamer DS-S includes an over 10-gallon-capacity water tank–double the size of DMF’s water tank– while maintaining the direct water hook-up option for end users. A double-size water tank is especially advantageous to mobile operators.
By merging a reservoir tank for direct hook-up and an internal water tank, the volume of the DS-S is considerably smaller than the size of the DMF. The new DS-S model is the shape of an elongated cube, which allows for easier transportation in lower ceiling vehicles, another added bonus for mobile business operators. An additional 4th wheel makes the unit much more maneuverable. Every part of the machine is easily accessible, which drastically speeds up the maintenance process.
The boiler construction of the Optima Steamer DS-S is made of 316 grade stainless steel, which has higher resistance to corrosion than typical stainless steel. The exterior of the new model is made of 304 grade stainless steel and exudes an impressive shine.
The debut of a stainless steel version of the Optima Steamer is especially exciting for the food and beverage industries. Storage tanks used to hold fruit juice, wine, beer and other food are often made of stainless steel because of its corrosion resistance and antibacterial properties. This also influences its use in commercial kitchens and food processing plants, as it can be steam-cleaned and sterilized without any chemical products.
“The food and wine industries often prefer to use equipment and fixtures of stainless steel,” says Mark Hagg, the owner and president of American Equipment Company in Portland, Oregon, an authorized dealer of the Optima Steamer lines in the Northwest region of the US. “My winery customers are our target market for the Optima Steamer. Steam is known to penetrate oak barrels up to ¼” into the wood, which gives a much better chance of removing Brettanomyces ,” says Hagg. Brettanomyces (also known as “Brett”) is a type of wine spoilage yeast that digs into wood barrels when growing, presenting a unique challenge to winemakers.
A new oak barrel costs about $800~1,500. Moreover, if a barrel is suspected to have a trace of Brett, they cannot risk using it for aging wine as this could lead to a catastrophe of spoiling the entire batch. Steam treating barrels can potentially save wineries tens of thousand dollars if not millions. In addition to steam’s natural sanitizing power, steam uses a fraction of water to achieve similar or better efficacy. Organic wastewater management is another costly expense for food and beverage production facilities. Local authorities closely monitor the BOD (biochemical oxygen demand) level of wastewater originating from such facilities as part of the Clean Water Act enforcement. Since the steam cleaning process produces very little or no wastewater, this also leads to saving time, hassle and money.
The Optima Steamer DS-S is now available through Steamericas and authorized dealers throughout the United States, Canada, Mexico, Peru and Puerto Rico. The all-electric stainless steel model, the “Optima Steamer EST-S”, is available in 5kW, 12kW, 18kW and 27kW heaters.
